Baked oatmeal with sour cherries

You can make all sorts of substitutions in this recipe. You can use other flaked grains in place of oats. I use flaked buckwheat and amaranth. You can use other nuts in place of almonds.  I use walnuts.  You can add or substitute other other bitter fruits like cranberries, bottled bitter cherries instead of dry. You can add crushed apricot kernels to supply additional anthocyanins instead of the almond essence.

2 cups    old-fashioned oats
4 cups    milk (raw cows or goats milk)
¼ tsp     almond essence
½ cup    dried tart cherries
¼ cup    rapadura sugar
½ cup    sliced almonds
1            large apple, unpeeled, grated or chopped

1. Preheat oven to 200°C (400°F).
2. Grease a 3 litre (quart) casserole or baking dish.
3. In mixing bowl, combine all ingredients.
4. Fold into baking dish.
5. Bake uncovered for 45 minutes. Serve hot.
