Goji berry and fig energy bites

This is seriously rich and delicious, so cut into small squares. I found this recipe firmed up nicely into well-formed bars.

375 g figs
50 g macadamia nuts
50 g whole almonds or walnuts
20 g sesame seeds
20 g flax seed or chia seed
100 g Goji berries or berry mix
50 g pepitas (pumpkin seeds)
2 tbs raw honey

1. Place first five ingredients in a food processor and pulse until combined into a sticky mixture. If using a blender pulse in two or three batches. Do not over process or nuts will turn into a paste.

2. Add the Goji berries and pepitas to the mix and mix through.

3. Stir in the honey and work it through with your hands until it is like a dough.

4. Press mixture into an 8” X 6” X 2” (1.5L) glass baking dish lined with baking paper and press down to fill the dish.

5. Carefully press a knife through the mixture to divide it into squares. Do not drag the knife through the mixture. This is very rich so cut into smallish pieces.

6. Refrigerate until firm.

I love the addition of Goji berries, Sounds very delightful with a cup of coffee. Goji Berries test well and I eat it after Gym for energy. Now knowing that it has health benefit I will eat more of it every day. Goji increases stamina and endurance, it helps to eliminate fatigue, especially when recovering from illness. Thank you!
